I'm trying to recreate this page http://isls-naples.psy.lmu.de/members/programs/index.html using Cobalt.

I've created those same Fields in the Cobalt component backend but the page displaying the list of records is displaying way too much information https://joomla.encorelab.org/communities/cobalt-naples-programs. Where do I edit this? I've gone through the Sections & Types settings several times & can't find where to remove: Rating, Avatar, Author, Created, Changed, C, B, V, F, H.

I would also like to change the order in which the remaining columns are displaying: Title, University, Location, Master's Program, Doctoral Program.

Apart from the section/type parameters, there are lots of display related parameters in the template settings.
You might read and see the intro part of the following docs article:

Each section/type template saves its own settings.

In order to change settings, you just have to click the respective labeled edit button. It will open a modal window with all parameters. The tabs and settings differ in each template. You can even build your own templates with parameters.

Headsup: The section template "Markup Layout" does also include the advanced search and filter parameters.

The ordering is the actual fields order in backend. See and edit your Type -> Fields. The fields listing offers a simple drag'n drop feature. I assume, you might know it from other Joomla backend managers. (You might have to click the first column heading to activate it.)
